Why do some scummvm games have their own F5 menu?

Having played several games in scummvm now, I'm intrigued as to why some have the original in-game load / save menu when you press f5 (e.g. fotaq, bs1, gobliiins), but others have the standard scummvm one (lucasarts ones). Why is this? Is it down to which games were reverse engineered and which were...

(Not got S&M here, but testing on ft.)

Does clicking the "Text and Speech" button until it says "Subtitles only" not work? I still get speech in cutscenes as well as the subtitles, but not in the game. Or did you want to remove speech in cutscenes too?
