I think there have been EOB remakes in Neverwinter Nights that you can run on your mac.
As for the Gold Box games, DOSBox is by far the easiest way to go. Also works well for Bard's Tale, Dragon Quest and so on.

Perhaps it is possible to bluntly stop all active timers and dump the whole program memory to disc? Not very graceful, but perhaps easier to implement?
