You can also edit your ScummVM.ini config file, look up for the Loom FM-Towns entry and add the following argument:

boot_param=x

where x is either 0 (practice), 1 (standard) or 2 (expert).

FYI, you're talking about FM synthesis, not MIDI. All FM-Towns models are equiped with a YM2612, same soundchip as the Mega Drive. It's not a bad processor, but it's not exactly as good as a YM3812 (fewer channels than AdLib, and the sound emulation itself is a bit rough compared to a real machine).

FI, we dug a bit further and found out there was indeed a US version of this game released on CD-ROM . It indeed contains the arranged OST by Bruno Ribera, but it's not clear whether those tracks are used ingame or not.
