There should be a button down in ScummVM's launcher called "Add anyway".
With this you get the "unknown variant" in your games list and can start it...and maybe crash, but still

If I understand it correctly EMI was marked unstable (due to a numerous amount of still not fixed bugs) and hence taken out of the supported games.
It will be back eventually, but for now it's unavailable.
You can still compile your own version with EMI enabled though

Wasn't there talk at some point that the possibility of using shaders for filters and scalers exist?
I remember seeing a video of shaders that gave beautiful results when scaling old games
