There was a bug introduced between version 2.1.0 and 2.1.1 that caused a crash when adding some games to ScummVM: https://bugs.scummvm.org/ticket/11433. There is no update I am afraid.
I would love to finally have shaders available in ScummVM but as always for this to happen we need a developer with the time, motivation and knowledge to work on it. And we are in short supplies of those.

I have now tried building for the iOS simulator (iPhone 11 Pro Max and iPhone 11) with Xcode 11.4, and it worked for me.
