Yes, it will definitely work. All of the games, including Monkey Island 1,2 and 3, I play using ScummVM are for the PC but I only have Macs.

Just ran Doom 3 for the first time and this has the same problem, 4:3 ratio with black letterboxing each side of the screen. Maybe the newish Broken Sword 1 and 2 double pack, but not for the individual releases, I think.

I could be wrong, but from memory I think the files you're looking for are compressed in the Windows installer files.

As for the CD not being read, do the usual .... wipe the CD, try another computer / CD drive etc.
