Because it turns off the speech (in MI1:SE).
Fortunately, they fixed that for MI2:SE. But, having the option to run in Scummvm w/ the voices is nice so you can run it on any OS you want.

That makes perfect sense. It's darn near impossible to tell if every possible situation in a game is computed/rendered in 100% perfection. Debugging/testing is never a completely done thing.
