My advice is share it in the form of patch files. The game should load them without having to pack them in the RESOURCE.XXX files. No. You'd have to build Laura Bow 2 from the ground up in AGS first which seems like a complete waste of time. AGS is entirely its own engine separate from SCI. Use SCI Companion for what you're trying to do.

Incidentally, I've not had any problems using MUNT on the Switch. I thought soundfonts were working fine too. But I haven't used it in a while.

Does it not have Fluidsynth for SoundFont use? Throw a good SC-55 soundfont on there and it's as General MIDI as you can get.

This shot was taken with DOSBox and then upscaled to 1600x1200 by me afterward. Just showing what it SHOULD look like. I don't know what results the ScummVM screenshot output actually yields. Might indeed be a bug.

Aspect correction definitely isn't supposed to horizontally stretch the picture. It's supposed to be the opposite with "tall pixels." However, it still might have uneven pixel heights unless your output game resolution is 1600x1200 (5x) which is the resolution where aspect ratio correction looks nic...
