You'd do better to post this question to the bug tracker, with an attached savegame just before the problem occurs. That way, it will be easier for people to see whether they can replicate the problem, and if so fix it.

Ah. In that case, you might want to try experimenting with Wine to see if you can run the installer, or find someone with a Windows PC you can temporarily install it on and then transfer the installed directory back to Linux to play.

Have you run the installer to install the game onto your hard disk? Although ScummVM replaces the original game executables, some of these games come compressed on the CD, and the original installer needs to be run first to uncompress the data onto the hard disk.

Try double-checking the copied file list against: http://www.scummvm.org/documentation.php?view=datafiles to make sure you have all the needed files.
