Since Sierra's AGI interpreter renders backgrounds using vector graphics, I'm curious as to why nobody has written an interpreter that renders these games at higher resolutions.
Is there a technical reason why this is not possible?

There were attempts to do it. Unfortunately, the games are designed to run only in 160x200 resolution. You may read more about failures with high-res here.
