Sorry I do not know much about this sort of thing.
But when I try to install ScummVM on my PSP 2.00 it does not work.
How do I do it?

Did you consult accompanying README file?

You mean you succeed to run ScummVM on your PSP? Fine.

When I try to use it, a message appears saying,

"Game cannot be started. The data is corrupt".

What does this mean?
What shall I do?

Please, please, go and look around the forums, read forum rules, especially rule #3a. In short: not enough information. What are you doing? Which game are you trying to run? Which files did you copy?

I am trying to play Secret Of Monkey Island (PC VGA PC) I have copied MONKEY.000 and MONKEY.001 into the same folder as EBOOT.PBP. The folder is in "GAMES".

When I try to run ScummVM on my PSP 2.00, it says, "The game cannot be started. The data is corrupted".

I don't have a 2.00 firmware PSP (and if I had, I would downgrade it to 1.50), but you can't load it directly.
You need to start it via the EBOOT loader on 2.00, which you can get here: http://www.fanjita.org/content/psp.html#loader
