I can't switch disks on Curse of Monkey Island.

I know the readme says to copy all the files into a single directory with several resourse subdirectories. I'm not exactly sure what this means and how to do it correctly. I have each disk copied into its own folder on my mac. Now what is my next move[s]?

No, you have to copy the files of both CDs in one directory with the resource folders of both in this directory. Look here.
